Diabetes - a Killer
My 31 year old son was airlifted to a hospital more than 2 weeks ago with multiple organ failure due to acute pancreatitis and was on life support in a coma. It was unknown at the time, but he had stopped taking his insulin 1 to 2 years as his benefits would not cover the type he was prescribed.
It was and is a very hard journey for him and for us, his family. As he lay unconscious, so many things came to mind. A child dying before me? What was this going to look like? Will he wake up? Lying unconscious, he looked like a little boy. As he regained consciousness and was later able to have the breathing tubes removed, he looked like a little old man all curled up into a ball in the bed. He reminded me time and time again of my own father who died 15 years earlier.
The love and support my own family, friends and the church gave was and still is incredible. If you do not have a church family, find one!
But for myself, as I too am diabetic, I saw my son and the serious condition he was in. I looked at my own life, and at my own habits. I realized that I am far from healthy and that if there is a positive lining to this, it is a wake up call for myself.
There are so many parts of my life that I need to reboot, so this is like a do over.
Once again, I will commit to journaling and working on rebooting each and every part of my life. I arrived back home yesterday. My son is doing much better, but still has a long journey ahead.
One of the things I started yesterday when I got home, was to take a really hard look at my eating habits and how they do not align with a diabetic/healthy lifestyle.
After eating restaurant food for the last few weeks, I craved homemade food and all I wanted was homemade soup. When I got home, I ordered groceries (too exhausted to go shopping) and filled my fridge with fruits and veggies and other healthy foods.
I made hamburger cabbage soup for my first meal home... it was delish!! (recipe below)
Hamburger and Cabbage Soup
1 lb ground beef
2 tsp salt
1 tsp pepper
1 onion chopped
8 oz tomato sauce
4 cups beef broth
4 cups cabbage chopped
2 carrots sliced
2 stalks celery sliced
14 oz diced tomatoes
(I also added turmeric, garlic/onion seasoning, smoked paprika, seasoning salt, cumin)
fry beef and onion together, add the rest of the ingredients, I also added a bit of water, bring to boil, then simmer until cooked.
